Maize oil is a versatile vegetable oil that has been used in kitchens around the world for over a century. Thanks to its neutral taste, high smoke point and favourable nutritional values, this oil fits perfectly into both everyday and conscious cooking routines.

What is maize oil?

Maize oil is extracted from the germ of maize kernels and is a light, neutral-tasting vegetable oil. Since the early 20th century, this oil has been used for cooking and baking, as well as in cosmetics and industrial applications. The oil is known for its high smoke point and mild flavour, making it particularly suitable for use in the kitchen, from frying and roasting to seasoning pans.

Additionally, maize oil is naturally rich in polyunsaturated fatty acids and contains vitamin E, an antioxidant. It is an oil that fits well into a modern, conscious lifestyle.

How is maize oil made?

Maize oil is made from the germ of maize seeds. During the milling process of maize, the germ is separated from the rest of the kernel. The germ is then carefully pressed, usually using cold or hot pressing, to extract the oil.

The crude maize oil is then refined: impurities, odours, and colourings are removed. What remains is a clear, golden oil that has a long shelf life and is widely applicable in the kitchen.

The oil in use

Maize oil is very suitable for cooking at high temperatures, for example in cast iron or carbon steel pans. Thanks to its high smoke point of around 230°C, the oil does not burn quickly and retains its properties during heating.

You can use maize oil for:

  • Frying and roasting meat, fish, or vegetables
  • Stir-frying
  • Seasoning pans (carbon steel or cast iron)

To season a pan, apply a thin layer of oil to the surface, heat the pan until the oil polymerises (hardens), and repeat if necessary. This forms a natural non-stick layer.

Storing maize oil

Always store maize oil in a cool, dry place, preferably in a dark bottle or kitchen cupboard. Avoid exposure to light and heat, as this can cause the oil to oxidise more quickly. Once opened, a bottle is best used within 6 to 12 months for optimal quality.

Has the oil become cloudy at low temperatures? No problem. Let the bottle come to room temperature and shake it gently if needed.
