A sharing platter is nice, but a warm, melting caprese brie from the fire? Now that really makes an impression. This creamy cheese goes into the pan with roasted tomatoes, crunchy almonds and a generous drizzle of honey. Everything slowly melts together into a delicious, gooey dip. Serve with grilled baguette and you have a next-level BBQ snack that could easily be on a menu.
Ingredients for caprese brie

- 2 brie cheeses
- A bunch of cherry tomatoes
- A handful of almonds
- 2 tbsp honey
- A pinch of salt
- 1 baguette
- Extra virgin olive oil
Cut the top off both brie cheeses so that the inside can melt nicely. Place the cheeses on a piece of aluminium foil and put them in a cast iron braiser.
Place the cherry tomatoes around the brie in the pan. The heat will give them a lovely, sweet bite.
Sprinkle the almonds over the brie and tomatoes. Then drizzle the honey over the top, don’t be too stingy. Finish with a little salt for that perfect balance between sweet and savoury.
Cover the pan with a lid or aluminium foil and place it on a moderately hot part of your BBQ or directly over the flames. Let it melt for about 10–15 minutes. The brie should be soft inside, and the tomatoes roasted.
Slice the baguette into thin pieces with a bread knife. Drizzle with olive oil and a pinch of salt. Place them in a hot grill pan or directly on the BBQ grill until they are nicely crispy and golden brown.
Remove the pan from the heat and serve immediately with the grilled bread. Dip, scoop, enjoy – this is comfort food at its best.
