Looking for a sandwich that’s got a bit more to say than your average lunch? This steak sandwich is exactly what you need. Packed with tender beef fillet tips, sweet shallots, spicy sriracha mayo and a generous helping of pesto and Grana Padano – it’s a sandwich that’ll leave you speechless. Or not... because you’ll want everyone to try it.

250 g beef fillet tips | 2 crusty white rolls | BBQ rub | 5 shallots | Fresh green pesto | Grana Padano | 25 g unsalted butter | Olive oil | Mayonnaise | Sriracha
Light your BBQ and aim for direct heat at around 180 °C. After about 15 minutes, place your cast iron frying pan on the grate to preheat.
Quarter or eighth the shallots depending on size, then separate the layers. Skip the tiny, thin bits – they’ll burn too quickly.
Slice the beef fillet tips into chunks about the same size as your shallot pieces. Coat them in BBQ rub and mix well so every piece is packed with flavour.
Use a bread knife to cut open the crusty rolls.
Mix 3 tablespoons of mayo with 1 teaspoon of sriracha. That’s it – you’ve got yourself a devilishly tasty sauce.
Melt the butter in your hot pan. Sauté the shallots until soft and translucent – don’t let them brown.
Take the shallots out, add a splash of olive oil, and fry the steak tips for around 4 minutes, stirring regularly.
Add the shallots back in and cook everything together for another 2 minutes.
Spread a generous layer of pesto on the bottom half of each roll. Pile on the steak and shallots.
Add a big dollop of sriracha mayo and finish with a good grating of Grana Padano. Spread a little extra pesto on the top half of the roll.
Top it off, press it down firmly and… tuck in like you mean it.
